I have always considered myself quite a nice person. I like food of all shapes, flavours and colours. From every country and continent. I don’t discriminate, I am an equal opportunity eater. It’s only the doctors who say I’m intolerant. And certain foods who refuse to tolerate me. They certainly refuse to recognise and respect my right to eat them without major physical discomfort and distress.


Gluten and lactose are not my friends.


Despite the negative attitudes surrounding me from many of those I love best, (cakes, ice cream, hot toast) I decided to become a chef. Not always easy when you live in a bread and milk filled world. I like to think that this has helped me become a better person as I embrace my differences and refuse to let the gluten get me down. I believe InTolerance. I am the InTolerant Chef.

Food should not be about what you can’t eat, but what you can and what you enjoy eating. This blog is about my journey of cooking and eating and discovery. It’s not a definitive guide to allergy awareness nor do my intolerances make me an expert. Your body is your responsibility, not mine. I only know what works for me.


I can tell you this..... No glutens were harmed in the making of this website.

In My Kitchen- June





Do you ever wonder what's going on in other kitchens?


My kitchen is often in a state of controlled chaos

Ingredients spread over the benches, magazine pages scattered, pots bubbling on the stove, freezer contents spilling over to the sink for defrosting, and hand scribbled notes peppered over all so I know what I'm doing with each item and don't mix them up. This all needs to be put away by meal times though, this is

Lovely MiddleC does the dishes every night and tidies the kitchen. I HATE clutter on my bench tops, so it's lovely to have a clean slate every morning- and so much fun to mess it up again!

Round two of Sous Vide machine
The first one lasted just two uses before dying. Very disappointing, I've historically not had great success with Sunbeam products, but I'll try again and see....

Can you believe Camel Burgers! I found these at Coles, not some weird exotic deli, just plain old Coles Supermarket. Sadly they do contain breadcrumbs :( but I will pinch off the tiniest bit just so I can say I've tried camel. My family never knows what they'll get when they sit down for dinner, I like to keep them guessing :)




Lovely Laksa Party
LittleJ's choice of party food to celebrate her birthday!
Big bowl of delicious homemade laksa soup with chicken and tofu puffs- paste and all made from scratch; bowls of noodles and accompaniments so the girls could put together their own creations




Handfuls of Henna
a lovely friend of MiddleC did a wonderful job of henna painting for the party, and the girls were very excited with the results




Some exotic ingredients that I'm looking forward to playing with:
Wild Willow Water, and Bergamont Syrup
Bergamont is the flavour infused into my very favourite Earl Grey Tea, so I'm really interested to see what I can come up with this one




Yet more cookbooks!
Both needed to help me have a good understanding of the Sous Vide technique. Definitely not the usual home cook recipe books, more technical and focused




The most gorgeous Tea Cosy from MiddleC
So pretty indeed, and just what I've always wanted. I think she finally realised that she was never going to get around to knitting one for me, so she chose this lovely specially to match with my favourite Tea Set




Freezer Foraging to go towards dinner
I was a bit buggy this weekend, so didn't get to the market. Instead I rummaged in the deep freeze and came up with some always-handy mince meat (no it doesn't say Mice, the bag is just folded), some oven dried tomatoes with garlic and herbs, and a good slurp of tomato pasatta from our Summer garden bounty....I'm thinking maybe pasta dish would tie these all together?

    1. I know Lorraine! They also had wild goat legs for only $10kg, and nice little bunnies too. So nice to have such exotic choices, and using those animals that so sadly do need to be culled in a productive way. x

    I think we all are curious about other foodie's kitchens too!
    Sometimes (gulp) my kitchen looks like world war three!

  8. LOL at the Camel burgers - what they don't know won't hurt them!! I've actually tried Camel - it wasn't bad at all!
    I love the henna shot, what a beautiful photo. I love Henna, especially when I see Indian weddings and they have done up the brides feet and hands. So beautiful. it does last days and days though!

    1. I've seen camel advertised as Hump Steak! Great marketing! The henna was really fun, and the girls loved it. Mine is still there, even under my cast!

Thanks Charlie, I love it too even though it's not the hand knitted one MiddleC promised :) I don't know if the camels are being 'farmed' or if the wild ones are just being culled productively. There are so many animals that sadly need to be culled, so it's much better for them to be put to such good use- tasty too! BigJ's stepdad culls pigs, goats, kangaroos and deer from several propeties locally- sad, but neccesary for the environment and their own sustainable population. xox

And how cool of LittleJ to want a laksa party for her birthday - clearly she's her mother's daughter! :) Henna hands are beautiful, but bugger about the sous vide machine - hope this new one lasts longer! x

    1. I don't plan on telling my girls until the meal is complimented and digested Celia! I'm more sneaky than you :) Littlej was very sure of what she wanted for her party, and I 'think' most of her friends enjoyed it- not all were keen on the tofu though. They had such a great time gossiping and trying out chopsticks, and the henna was a big hit indeed.
      The second machine I picked up didn't have a power cord, so hopefully this time things will turn out right. xox

    I want a sous vide machine so badly. I looked at the Sunbeam but can't decide if I want to spring for the Breville.

    1. Maureen, if you're planning on using the sous vide a lot then the Breville would probably be a great idea as it's got a much bigger capacity. I'm not hugely fond of Sunbeam products as I've had a lot of negative experiences, and I had to return this one after just 2 uses as it completely stopped working! Let me know how you go if you get one :)

  15. There's been almost no action in my kitchen as I've been away for 3 weeks. I came home to find the same 4 carrots in the bottom of the crisper as I'd left there, so I did a big shop at the farmers market yesterday. Now we have plenty of veggies plus a big haul of maple products that I lugged back from Canada!

    1. How funny are those carrots! It would probably be fairly similar at my house, unless of course it was a yuckky mess in there instead! Lucky you with maple goodies, I've always wanted to taste maple sugar- yummo!

  16. Controlled chaos, I love that! And the Laksa party idea ... so lovely! :D

    I'm a rather clean cooker and usually put away and clean up everything when I've finished cooking. I've recently had a third attempt on veganism (this time successful, phew), and my husband is allergic to animal protein and wants to ditch dairy as well now, so there has been a lot of change in the kitchen lately - meaning more cooking involving legumes, whole grains, nuts, and seeds. Also some baking going on! :D
